What is a Westine Waffle
People ask us frequently “What is a Westine Waffle?” We explain they are Westine’s Waffles. Westine Smith was the mother of a good friend and former business partner of mine and this old family recipe came to us from her. These unique and delicious waffles are great just plain or the Garden State version (with fruit and whipped cream) are even better. They are also the basis for our waffle sundaes. Nothing more delicious than homemade ice cream and these made from scratch waffles.
I met my friend Doug Smith over 25 years ago while we were both working at a large chemical plant just outside Charleston, WV. At the time Doug was the purchasing manager for the plant and I had been quickly becoming the go to person for anything IT related. We both got assigned to a corporate business project reshaping the way our 80 facility company in the US would handle purchasing. Doug and I traveled back and forth between Charleston, WV and Princeton NJ every week for nearly a year. We became good friends and during that time developed an idea for what would become an early cloud service for chemical plants. We started this cloud company together in 1999 and it remained operational until just last year.
In 2003 when I purchased The Carisbrooke Inn we were looking for a unique and amazing waffle recipe. Doug was always telling me how wonderful his mom’s waffles were so we asked if we could use her recipe. She was happy to give it to us and that is how Westine’s Waffles made its way to first The Carisbrooke Inn, then Carisbrooke Cafe, and eventually North Beach Cafe & Creamery.
